Farta is a beautiful magazines, that aims to show the value of traditional Portuguese dishes.
An hybrid between a magazine and an artistic platform, the project takes on Portuguese recipes and culinary traditions that are widely consumed but less celebrated; the first edition is all about francesinha.
Issue #4: Rissol
It is in the windows of snack bars and pastry shops, next to the bread in bakeries, in convents and on the menus of restaurants with white linen tablecloths. Few recipes are as ubiquitous in Portugal as the rissol, the beloved fried snack that we proudly spread on our fingers in the morning, accompanied by a coffee, that we eat with rice at lunch or that helps us to satisfy our hunger in the restaurant before dinner arrives.
Geometric, golden, crunchy. A semicircle that always seems to want to be completed, as if a half were missing. But the rissol is whole in its essence. Light in size, heavy in heritage, filled with stories that extend beyond the kitchen. A testament to our culinary identity, to the tradition that resists and reinvents itself.
