Bar Brutal: A Cookbook of Revelations is the first book from Barcelona’s Bar Brutal, created with Apartamento. Over 320 pages, it brings together the wines, people, dinners and chaos that have shaped the restaurant since 2013.
At its centre are 26 recipes from chef Mathieu Perez, surrounded by archival imagery, DIY-style collages and stories from more than 80 contributors connected to Bar Brutal’s world of natural wine, food, music and hospitality. Contributors include Stefano Colombo, Joan Ramón Escoda, Christian Tschida, Nuria Renom, Thierry Puzelat, Peggy Gou, 2manydjs, Gilles Peterson, Aziz Ansari and members of LCD Soundsystem.
Photo essays by Adrià Cañameras, Nacho Alegre and Yago Castromil document the dinners, bottles, people and spaces by day and night, while four written chapters trace the evolution of Bar Brutal and its role in Barcelona’s natural-wine culture. The book was brought together by former Apartamento editor and long-time Brutal regular Madeleine Willis.
About Bar Brutal
Founded in Barcelona in 2013, Bar Brutal became an important meeting place for natural winemakers, sommeliers, chefs and drinkers, helping turn the city into one of the key hubs of contemporary natural-wine culture. This book captures that mix of food, wine, people, music and informality rather than presenting itself as a conventional restaurant cookbook.
